Ingredients
2 boneless, skinless chicken breasts
½ cup Italian breadcrumbs
¼ cup plain breadcrumbs
¼ cup grated Paremsan cheese
1 tbsp Snider’s Prime Rib & Roast Seasoning
2 large egg whites
1 cup shredded mozzarella cheese
½ cup marinara
Method
- Preheat your oven to 400 °F and lightly spray a baking sheet with cooking spray.
- Slice each chicken breast in half lengthwise. If needed, pound the pieces to achieve a ½ inch thickness. Set aside.
- In a wide, shallow bowl, combine Italian breadcrumbs, plain breadcrumbs, parmesan and Snider’s Prime Rib & Roast Seasoning.
- In a separate bowl, whisk together the egg whites.
- Separately, dip each piece of chicken into the egg whites, then the breadcrumbs. Gently pat the chicken so the crumbs stick to all sides.
- Place the chicken on the baking sheet and coat the top with additional cooking spray.
- Bake for 20 minutes and then remove from the oven.
- Add marinara and mozzarella evenly to top of chicken and return to oven for an additional 5 minutes
- Serve immediately with your favorite red pasta!
