INGREDIENTS
1 lb ground beef
1 yellow onion, diced
3 tbsp Snider’s Ancho Chili Original Seasoning, divided
1 can of Rotel
1 can of red kidney beans, rinsed
2 cups beef broth
2 cup elbow macaroni
2 cups shredded colby jack cheese, divided
1 oz cream cheese
INSTRUCTIONS
- In a large skillet sauté ground beef, diced onion, and 2 tbsp of Snider’s Ancho Chili Original Seasoning.
- When meat is browned, add kidney beans, elbow macaroni, Rotel, and beef broth. Mix well.
- Bring the skillet to a boil and then reduce heat and simmer for 15 mins.
- Add cream cheese, 1 cup of shredded colby jack and 1 tbsp of Snider’s Ancho Chili Original Seasoning. Mix well.
- Top with an additional 1 cup of shredded colby jack, turn off heat and let melt on top for about 2 minutes.
- Serve immediately and enjoy.
